French Onion Soup (The Quick Way)

Ingredients

  • Yellow or Vidalia onion
  • Butter
  • Stock (1/2 beef, 1/2 chicken)

 

Slice the onion, put into a heavy pot with some butter and a bit of water. Put the lid on and steam the onions until they are wilted. This will make caramelization significantly faster. Then remove the lid and finish caramelizing the onions. When deep brown, add the stock.
