Rappini, also known as Broccoli Rabe, is a tender yet slightly bitter vegetable.
Ingredients:
- 1 large head rappini
- 3/4 tsp kosher salt
- 1/2 cup chicken stock, double strength
- 3-4 large cloves of garlic
Smash the garlic, peel, and mince finely. Cut the ends off the rappini (3 millimeters) and chop the stems finely. Continue chopping up the stem until you reach a leafy portion. Increase the chop size to about 1.5 inches and coarsely chop the remainder of the leaves.
Add all ingredients except the salt to a large saute pan and cook, covered, over medium heat, for about 5 minutes or until the pan is steamy and the rappini is a bright green. Add the salt and toss well. Cover once more and cook for 2 minutes.
